Ultimate Healing Soup Recipe

Chicken Paprika Soup

This soup recipe is my go to creation whenever I feel I am under the weather, an immune attack, weak or low energy and in need of a rejuvenation. I will personally feel better within 1-2 days after eating the first meal of this batch, depending on how run down I am feeling. This batch can make 4-5 meals depending on portion size.

**I do not accurately measure when I cook. All measurements are approximations through the eyeball and taste method. This can depend on who I am cooking for, my desired flavor for that day etc etc etc. I encourage all to feel into their intuition and senses when engaging in kitchen witchery.**

Ingredients:

Olive Oil or Butter

Bone Broth (Choose Preferred)

Paprika

Turmeric

Salt

Onion

Garlic

Ginger Root

Sour Cream

Chicken Breast (Or Preferred Cut)

Flour

Jasmine Rice (Optional)

Instructions:

  • Use olive oil or butter to sauté up onions and garlic. Chopped or mince onions/garlic to preference with approx 3 tablespoons of paprika, approx 1 teaspoon of turmeric and a pinch of ginger root. I will shred a few shavings of fresh ginger root into mine. You can use ginger root powder. If you use the powder, eyeball a pinch and place in the pot. I prefer my onions really soft so I’ll sauté them for a good chunk of time on a medium heat and cover with a lid. I will use one large onion and 6 garlic cloves typically.

  • Once they are cooked to preference, it is time to add the bone broth for the really good extra nutrients and protein! However, you can use water only. Just add extra salt if you do and add a bit of rosemary, thyme and sage. Bring it to a boil.

  • Once water is at a boil add chicken! Lower the heat and let it simmer until the chicken is cooked! This is similar to a Pho style of cooking. The meat should not take too long. I average 15-20 min depending on how much chicken I use. Chicken amount is typically 1-2 chicken breasts. However you can add or subtract pending on amount desired.

  • Once chicken is cooked, if you have not already done so to simmer, turn down the heat to the lowest setting. Then add about a cup of sour cream. You can add more or less depending how creamy you desire it to be. Add a bit of flour if you want to thicken it up a bit. I never add more than 1/2 a tablespoon of flour when I do it. But thickness can be to preference.

  • Stir and allow the ingredients to sit, soak and mix for approx 5-10 min. If you are going to add rice to your meal for added carbs, calories and heartiness, this is a great time to start the rice process. I use an instapot rice maker.

  • Finally, your soup is ready to serve and eat!

I will eat it as is from the pot as a soupy soup without the rice. My husband will add rice to his and eat it with minimal broth. You can add as much rice or broth as you desire for your dish. I encourage to sip on as much broth as possible. The broth is filled with the super good nutrients and benefits. I will sip on the left over broth once all the meals are portioned out.
